Parmigiano Reggiano cheese
Parmigiano Reggiano is one of the most famous cheese throughout the world, thanks to its inimitable fine flavor and texture. Natural feeding of the cows and no addittives in the milk, is synonymous with quality. This extraordinary cheese was made for the first time around 900 years ago in the area of Parma and Reggio Emilia, between Po river and Apennine’s mountains.
Today, Parmigiano Reggiano cheese is a Protected Designation of Origin (PDO) product. This means that the trademark can only be put on the cheese if the production and processing are done in the place of origin, and according strict rules of processing methods. Neither any kind of silage or fermented food, nor any animal origin feed or by-product of the food industry are permitted in the feeding of the cows. Milk is produced by cows fed grass grown only in the place of origin togheter with natural animal feed.
Knowledge and skill of the cheese maker are essential to transform milk into Parmigiano Reggiano: a product totally hand made, where 640 liters of milk are used to make a single wheel of Parmigiano Reggiano
Parmigiano Reggiano is suitable to long aging time, 24 months or even more. During the long ageing process, natural fermenting agents in the milk give the cheese its particular flavour and texture.
At 12 months of aging, the wheels of Parmigiano Reggiano are inspected by an expert of the “Consorzio del Parmigiano Reggiano”. If the features of texture, appearence and structure of the cheese pass the inspection, the wheel will be marked as “Parmigiano Reggiano”.
Parmigiano Reggiano has undoubtly many nutritional qualities, which recommend its use in everyone’s diet. A cheese rich in proteins, calcium, phosphorous, vitamins and with low level of cholesterol and high digeribility, make of Parmigiano Reggiano one of the most healthy foods to eat.
