The slicing process of our italian deli meats takes place strictly at a positive temperature, the meat is never frozen, rather we prefer more aged products to get a better cut. The slices are placed by hand by specialized operators: the technique by which the slices are placed inside the preformed trays, allows to have the typical “wave-shaped slice”. This is done in order to prevent slices from sticking to one another as in the case of typical placement. Our range includes many specialties of Parma, Emilia Romagna and also very popular delicatessen products from northern Italy

Prosciutto di Parma Pdo min.18 months

Parma ham also known as “Prosciutto di Parma”, represents the excellence in the pork meat processing. The place of origin where Parma Ham can be made is in the hills south Parma. The entire production line must be located within this area, which has a special microclimate ideal for the drying of Parma ham. The wind coming from the nearby Tirrenic coast, crosses the Apennines where it loses its saltiness and dries, giving a unique sweetness. The production starts from an accurate selection of breeds of pig and breeding farms. The diet is based on grains, cereals and whey from Parmigiano-Reggiano cheese. The pigs must be at least nine months old and weigh around 140-150 Kg before go to slaughterhouse. This is a distinctive character of Parma Ham, with its huge thighs rather than the smaller ones coming from younger abroad pigs. The salting particularly fine and the slow seasoning process in natural cellars give to it a delicious and unique flavor. At the end of the processing, if all steps have been respected, the five-point Ducal Crown brand will be stamped under the strict control of the inspectors of Istituto Parma Qualità

Felino Salami Pgi

Felino Salami is very popular in the Food Valley and its celebrity is really deserved. This cured meat product has been produced for centuries in the town of Felino. The processing is hand crafted and the meat used to produce Felino Salami comes out from an accurate cut selection of deboned shoulder and belly pig. It is only used pork meat of first choice, coming from national Italian slaughterhouses with EU permission. The meat is mixed with salt, spices and natural aromas. The mixture is then put into a pork natural casing and then tied strictly by hand. During the 30-40 days of aging process, on the outer surface of the salame is formed the typical grey mold, which helps to enhance the characteristics of the finished product. Felino salami is the result of the best pork meat with the typical microclimate of the production area, allowing it to be aged naturally and develop a sweet and delicate flavor in the final product

Coppa

Coppa is one of the most famous salami of Emilia Romagna region. It is renowned for its fragrances with a good percentage of fat which makes coppa very sweet. Coppa meat is taken from the neck of pig, its special flavour is the result of a correct aging with salt and spices like cinnamon and clove. Salting process is handmade and tying is made traditionally with strings. The meat is aged between six months to a year and can be found stuffed into a pork casing or beef intestine. It’s ideal to taste combined with our traditional “gnocco fritto”

Milano salami is one of the most known italian salami all over the world. The meat is minced to the size of a grain of rice. Milano salami is then flavoured with garlic, white and black pepper and moistened with white wine. The aging is about 2 months, at the end of this process Milano salami achieves its distinctive fragrance and mild flavour. This salami is ideal to be eaten in sandwiches because of its strong aromatic taste

italian bresaola sliced

Italian Bresaola

Our Bresaola comes from selected italian meat “Piemontese breed”. It is air-dried salted beef, stuffed in artificial or natural casing, at the end of aging time, bresaola becomes hard and turns a dark red, almost purple colour. The meat loses up to 40% of its original weight during aging. Bresaola is ideal to be eaten as antipasto, sliced paper-thin and served at room temperature or slightly chilled. It is most commonly eaten on its own, but it also may be drizzled with olive oil and lemon juice or balsamic vinegar, and served with rucola, salad, cracked black pepper, and shaved Parmesan cheese

It is made with hind leg of pork, which has the bone removed and is flavored with brine, then steam cooked. It is processed in an extremely delicate brine that enhances all the flavor of fresh meat. The accurate natural hanging, the handcrafted manufacturing and the slow cooking allow this ham to become a high quality product, rich in flavor, soft taste and characterizing aroma. Mortadella selected by Deliziami is made from pork born bred and slaughtered in Italy, to guarantee better control of the supply chain, such as breedings and animals feedings. Mortadella production process starts from a choice of the better cuts of Italian pigs. The meat is ground by machine, and frozen, later it will be chopped and minced in order to form a smooth paste. Pepper, salt and garlic are added along with cubed fat coming from the throat of the pig. The mortadella is gluten free and does not contain any lactose to respond to consumers demands regarding allergens
